The red garlic of Sulmona

Cultivated for centuries in the mountainous areas of Abruzzo, particularly in the Peligna Valley, the red garlic of Sulmona is part of the Traditional Italian Food Products (PAT) of Abruzzo.

Unlike other varieties, the red garlic of Sulmona is characterised by its purple tunic, accentuated pungency and intense aromatic persistence. It also has a high allicin content, the most important active ingredient in garlic, which is responsible not only for its strong flavour but also for extraordinary beneficial properties. 

Why sprouts are different from cloves

Sprouts are the shoots that grow inside the clove. When a garlic bulb is stored for an extended period, especially in humid and warm conditions, it can start to sprout. This process produces a small green stem that emerges from the clove, the sprout, which is rich in antioxidants and has a milder, fresher taste than the clove.

Garlic sprout garlic is edible. Sprouts have nutritional properties that are particularly effective against viruses and bacteria, and support the immune system. In fact, they retain the antibacterial and anti-inflammatory properties typical of garlic.

But, let us come to the taste. While cloves have a strong, pungent taste - which is why they are often not a success - garlic shoots have a completely different flavour. They are distinguished by their delicate taste and scent, and are more digestible. 

A discovery even for those who don't like garlic

If you don't particularly like garlic, know that sprouts are a different story.

They are light, they taste totally different, herbaceous and not pungent. Their taste does not overpower that of other ingredients, quite the contrary.
